To make Sweet Potato Muffins, you need those ingredients:

  1. ¾ cup raisins
  2. Liquid Vanilla
  3. 4 eggs
  4. 2 cups sugar
  5. 1 cup vegetable oil
  6. 1 tbsp liquid of vanilla
  7. 2 cups of sweet mashed potatoes
  8. 3 cups of flour
  9. 2 tablespoons of baking powder
  10. ½ teaspoon of salt
  11. 2 teaspoons of ground cinnamon
  12. ¼ teaspoon of ground nutmeg
  13. ⅔ cup milk

For decoration:

  1. ½ cup of brown sugar
  2. 4 tbsp of butter
  3. 3 tablespoons of gravy whisked


How To Make Sweet Potato Muffins:

  1. Heat the oven to 350 degrees Fahrenheit then brush the cupcakes with oil and sprinkle with flour.
  2. Mix the raisins with a little vanilla and leave for about an hour.
  3. Meanwhile, Rub the eggs with an electric mixer with sugar for 3 minutes then add the oil and 1 tbsp vanilla liquid and mix well.
  4. Filter the vanilla from raisins and set aside.
  5. In another bowl mix the flour, baking powder, salt, cinnamon and nutmeg and stir well until the ingredients are mixed.
  6. Then add one-third of the flour mixture to the cake mixture and stir with adding half the milk.
  7. Add another third of the flour and move with adding the rest of the milk.
  8. Then add the rest of the flour and stir until the mixture is smooth.
  9. Add the raisins and walnuts to the mixture, pour it into the cupcakes, put in the oven for 1 hour, then let it cool.
  10. Mix brown sugar, butter, cream and a little vanilla and put the ingredients in a pot on high heat until boiling with stirring for 3 minutes.
  11. Put the mixture over the cake then let it cool completely and cut it to serve.
