Cowboy Salsa ( Caviar ) recipe

Some people know Cowboy Salsa snack as Cowboy Caviar snack or Bean and Corn salsa too, it is an old snack, but still has its unique place in every house until today.

This cowboy salsa snack is your best choice for every breakfast, and all kids like it so much.

Most of the kids like having that snack cold, and you can make it more delicious by adding some tortilla chips on it.

It takes only 20 minutes to make that snack ready, and it will be enough for at least 10 people.

Ingredients:

  • 1/2 cup olive oil
  • 1/4 cup sugar
  • 1/4 cup vinegar
  • 8 diced Roma tomatoes
  • 1 (15 ounces) can black-eyed peas, drained and rinsed
  • 1 (15 ounces) can black beans, drained and rinsed
  • 1 (11 ounces) can super sweet drained corn
  • 1 diced red onion
  • 3 limes
  • 1 teaspoon salt
  • 1/2 cup diced green bell pepper (optional)
  • 1/2 cup diced red bell pepper (optional)
  • 1 cup chopped cilantro
  • 1 large avocado peeled

 

How to make Cowboy Salsa:

  1. Bring a large mixing bowl, and combine the diced tomatoes, sliced avocado, chopped onion and bell pepper, drained the corn, rinsed and drained black beans, and chopped cilantro all together
  2. Squeeze lime juice into the bowl
  3. You need to add a pinch of salt
  4. Mix all the past instructions together until they become blended in a perfect way

 

Notes:

  • You can use some Newmans Own or Olive Garden to make the flavor of that snack so yummy
  • You can put a fried egg at the top of that snack in order to have a healthy breakfast salsa
  • Do not forget to serve it with some organic corn chips
